Carrot and Coriander Soup


  • 2 tbsp extra-virgin olive oil
  • 1 medium, roughly chopped onion
  • 500g carrots peeled, ends trimmed and chopped rougly
  • 1 whole, peeled garlic clove
  • 1 rounded tsp ground coriander
  • cracked pepper, plenty
  • 400-600ml stock veg or chicken
  • 2-3 heaped tbsp chopped fresh coriander to finish


  1. Add oil to a large pot, heat on medium
  2. Add the veg as your prepare them and cook for a couple of minutes to get some colour on them.
  3. Add the ground spice ad garlic, pepper and cover with the stock.
  4. Bring to the boil then transfer to the slow cooker for 8-9 hours on low or low on the stove.
  5. Blitz with a stick blender and add the fresh herbs before you serve.
  6. Enjoy!
