Irish Mash Potato with Cabbage


  • Serves 6

    For the potato:

    • 6 medium potatoes
    • 60ml cream
    • 60ml milk
    • 30ml butter
    • White pepper and sea salt to taste


  • Boil or steam the potatoes until soft, mash until smooth. Warm the cream, milk and butter together and beat into the potato. Season to taste

For the cabbage:

  • 1 medium sized cabbage – finely shredded
  • 15ml butter
  • 1 good sized leek, including the green top
  • 30ml rosemary
  • Sea salt to taste


  • Heat the butter in a pan and stir fry the leeks until soft. Add the leeks and cook until soft but still bright green. Season to taste
  • Fold the cabbage into the mashed potato, serve garnished with rosemary.
