Pork Mince Wraps


1 packet of 10 wraps (or pita bread)

2 Tablespoons olive oil

1 Onion

2 Garlic cloves

1 Tablespoon spice rub (optional) or chilli to taste

500g Trotters Pork mince

2 Cans tomatoes in juice

2 Tablespoons tomato paste

5 Springs Fresh thyme

3 Sprigs Fresh parsley

Sour cream



1.Heat the olive oil and add chopped onion and garlic. Cook gently for 5 minutes and then add spices (if using).

2.Add the pork mince and stir well until the mince starts to brown.

3.Mash the tomatoes and add to the mince with the tomato paste and the freshly chopped herbs

4.Simmer all the ingredients for 20-30 minutes, stirring occasionally until well cooked. Add a little water if in danger of drying out.

5.Season to taste and leave to stand, covered, for 10 minutes before serving .

To serve, 2 spoons of mince into the middle of your wrap and add a dollop of sour cream and any other freshly cut salad items.
