500g Veg Box stir fry pack
500g Bannatyne’s pork stir fry pack
5 Tbsp soy sauce
1 Tbsp cornstarch
2 Tbsp sesame oil
2 cloves garlic crushed
1 chopped fresh red chilli
1 chopped onion
1 tsp ground ginger
Whisk soy sauce, vinegar, and cornstarch together in a small bowl.
Heat 1 tablespoon sesame oil in a wok over medium-high heat. Cook and stir pork strips in hot oil until just browned, 2 to 4 minutes. Transfer pork to a plate and return wok to heat.
Heat remaining oil in the same skillet over medium-high heat. Cook and stir chopped red chilli and garlic in hot oil until sizzling, 15 to 30 seconds. Add onion to skillet; cook and stir until onion starts to soften, 2 to 3 minutes. Add stir fry pack and cook until slightly softened, about 2 minutes. Add pork, and soy sauce mixture; cook and stir until well-combined. Season pork mixture with ginger; cook for a further 5 minutes. (you don’t want to overcook the veggies).
Enjoy over rice or noodles or plain for a healthier option. Feel free to add in any other veggies you have lying around in the pantry.
