Roasted Beetroot with Baby Spinach, Rocket + Feta

Ingredients:

For the salad:

  • 3-4 beetroots, washed & scrubbed
  • Salt + Pepper
  • Coconut oil (for roasting the beetroot)
  • 120g Baby Spinach
  • 80g Rocket
  • 100g Longshadow Feta

For the dressing:

  • Olive Oil
  • Balsamic Vinegar
  • Lightly toasted Mustard seeds
  • Honey

Method
Chop the beets into chunky pieces, spread on a tray, drizzle them with warmed coconut oil, salt and pepper. Roasting them for 30 mins at 180°C, or until tender.

Combine the rocket and baby spinach, then spread onto a platter.

Allow the beetroot to cool slightly then arrange on top of the greens.

Crumble the feta on top.

Mix the dressing ingredients together and drizzle over before serving
