Spiced Beef Brisket with Roasted Red Onions


15ml Olive oil
1kg beef brisket, trimmed
2 garlic cloves, peeled
10ml sea salt
5ml black peppercorns
5ml coriander seeds
5ml cumin seeds
2ml cayenne pepper
15ml brown sugar
500ml beef stock

Fresh rocket leaves
Sundried tomatoes, in oil (optional)


4 small red onions, peeled and cut into thick wedges
30ml butter
15ml honey
15ml olive oil
5 thyme sprigs
Salt and milled black pepper


Preheat oven to 160’C. Rub the oil over the brisket and sear in a hot pan, for 2-3 minutes per side. Remove from the heat and allow to cool. Place the remaining dry ingredients in a pestle and mortar and grind to a coarse mixture. Rub the mixture over the brisket and place into the oven for 1 ½ hours. Pour the stock around the brisket, cover with foil, and roast for 1 ½ – 2 hours, or until meltingly tender.


Preheat the oven to 160’C. arrange the onions in a single layer in a roasting pan. Melt the butter and honey together in a small pan. Remove from the heat and stir in the olive oil. Drizzle the mixture over the onions. Scatter the thyme over the onions and season well with salt and pepper. Roast in the oven for 20 – 25 minutes.
