Tomato & Onion Braai Relish


2 large onions, chopped
5 garlic cloves, crushed
1 heaped tsp sugar
400g ripe tomatoes, chopped
1 green chilli
2 tablespoons balsamic vinegar
1 heaped tablespoon chopped parsley
Salt & Pepper to taste

Place a heavy-based pot a high-heat. Add 1 tablespoon of olive oil, the onions, crushed garlic and sugar and let caramelize for 5-7 minutes, stirring occasionally. Once the onions have softened, add the chopped tomato, and the balsamic vinegar. Bring to a simmer, reduce heat and cook for 30 minutes, stirring occasionally. Once cooked and thickened, add the parsley, and salt and pepper to taste.
