Cauliflower & Broccoli Bake

Ingredients:

  • ½ a head Cauliflower
  • ½ a head Broccoli
  • ½ packet Mushrooms (cut into pieces)
  • 1 Green pepper (Cut into pieces)
  • ½ Packet Cherry tomatoes (cut into halves)
  • 250g Bacon
  • 1 Wheel Feta
  • Cheese (Cheddar or Mozzarella)
  • 1 Egg
  • 250ml Cream

Method:

  1. Preheat oven to 190 degrees Celsius.
  2. Steam Cauliflower and Broccoli.
  3. At the same time pan fry mushrooms, green peppers and tomatoes with salt and pepper to taste.
  4. Remove mushroom mix from pan and add bacon to the pan and fry (less dishes to clean)
  5. Once cauliflower/broccoli is cooked drain excess water and place in an oven safe dish, place mushroom mix on top then bacon, add the broken pieces of feta.
  6. Mix egg and cream and pour over the dish.
  7. Sprinkle grated cheese on top and bake in the oven for 30min.

Notes:

  • Add some herbs and spices to your dish (your choice rosemary and thyme work wonderfully)
  • Best of all this is a dish that can feed quite a few people with very few ingredients.
