Cauliflower Curry
Cauliflower Curry
Ingredients:
For this recipe you can use frozen or fresh Cauliflower
- 1 Onion finely chopped
- 30ml oil
- 1 tsp crushed garlic
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- ½ tsp turmeric
- 1 small chilli – chopped
- 8-10 curry leaves
- 2 Tbsp lemon juice
- 1-2 tsp brown sugar
- 2 tbsp tomato paste
- 1 ½ pkts Eastvale Farm Produce Cauliflower (fresh or frozen)
- 250ml coconut cream
Salt and Pepper
Method:
- Fry onions in the oil until soft, add garlic and all spices inc. curry leaves and fry for a further 2 minutes
- Add lemon juice, sugar and tomatoes, cook until it all thickens slightly
- Add Cauliflower :
- fresh cook until soft
- frozen cook until de-frosted and warm
- Add coconut cream, heat until hot
- Serve with Basmati rice
