Cauliflower Curry

Ingredients:

For this recipe you can use frozen or fresh Cauliflower

  • 1 Onion finely chopped
  • 30ml oil
  • 1 tsp crushed garlic
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • ½ tsp turmeric
  • 1 small chilli – chopped
  • 8-10 curry leaves
  • 2 Tbsp lemon juice
  • 1-2 tsp brown sugar
  • 2 tbsp tomato paste
  • 1 ½ pkts Eastvale Farm Produce Cauliflower (fresh or frozen)
  • 250ml coconut cream
    Salt and Pepper

Method:

  1. Fry onions in the oil until soft, add garlic and all spices inc. curry leaves and fry for a further 2 minutes
  2. Add lemon juice, sugar and tomatoes, cook until it all thickens slightly
  3. Add Cauliflower :
    • fresh cook until soft
    • frozen cook until de-frosted and warm
  4. Add coconut cream, heat until hot
  5. Serve with Basmati rice
